BLUEBERRIES AND
CHEESE with COCONUT- CINNAMON TOAST
- Mix 1/4 cup fresh blueberries with 1/2 cup cottage cheese
and sweeten it to taste with NutraSweet or Equal.
- Toast I slice Pepperidge Farm Very Thin bread on one side
only.
- Spread the other side with soft butter mixed 1/2 teaspoon
brown sugar, a sprinkle of cinnamon, and 1heaped teaspoon
of unsweetened grated coconut (at the health food store or
the freezer case of some supermarkets).
- Broil until bubbly and golden brown. Serve toast with the
cottage cheese and berries.
