BLUEBERRIES AND CHEESE with COCONUT- CINNAMON TOAST

  1. Mix 1/4 cup fresh blueberries with 1/2 cup cottage cheese and sweeten it to taste with NutraSweet or Equal.
  2. Toast I slice Pepperidge Farm Very Thin bread on one side only.
  3. Spread the other side with soft butter mixed 1/2 teaspoon brown sugar, a sprinkle of cinnamon, and 1heaped teaspoon of unsweetened grated coconut (at the health food store or the freezer case of some supermarkets).
  4. Broil until bubbly and golden brown. Serve toast with the cottage cheese and berries.
