COD with TOMATO SHRIMP SAUCE

  1. Mix 2 tablespoons crème fraichce or sour cream with minced chives, a squeeze of sun-dried tomato paste from a tube, a pinch of cayenne, and a squeeze of lemon.
  2. Fold in I ounce chopped cooked shrimp and serve the sauce over a thick 4-ounce fillet of cod steamed in the microwave.
