GREEK SALAD

  1. Cut up 1/2 medium ripe seeded tomato, 1/2 medium green pepper, and 1 1/2 peeled and seeded cucumber and toss into a salad bowl.
  2. Add a slice of sweet onion separated into rings, a minced garlic clove, some chopped fresh dill, and lots of chopped parsley.
  3. Drizzle olive oil and red wine vinegar over the salad and top it with an ounce of crumbled feta cheese.
    PER SERVING: 8 grams carbohydrate, 8 grams protein
