PARSLEY SALAD

This salad tastes wonderful with grilled lamb or roast chicken.

  1. Pull the leaves off a bunch of parsley and measure out I cup.
  2. Dress the parsley leaves with fresh lemon juice and freshly grated Parmesan cheese, salt, and pep? You don't really need oil, but you can add a little olive oil if you like.
  3. Sliver 1sun-dried tomato and toss it in.
