STIR-FRY DISHES

  1. Simple vegetable stir-fries with the addition of thinly sliced beef, chicken, pork, tofu, or whole shrimp are perfect hurry-up, low-carb meals.
  2. Choose from mushrooms, green beans, eggplant, red pepper, bok choy, asparagus, scallions, baby corn, carrots, spinach, snow peas or sugar snaps, celery, bamboo shoots, and water chestnuts.
  3. Heat the wok until it's hot and add peanut oil, minced garlic, a slivered coin of ginger, and a dried hot chili or two if you like your stir-fries spicy.
  4. Briefly cook the meat first, remove it (and chilies) to a side bowl, and then briefly toss and cook the vegetables.
  5. Add the meat back in and season with soy sauce, tamari, oyster sauce, or one of the many good liquid stir-fry seasonings available at gourmet stores.
  6. Check labels; some of these are loaded with carbs.
